Red Leaf Salad with Mango Chutney Dressing

Yields: 6 Servings


  • 8 cups of torn red leaf lettuce
  • 1  tart apple, coarsely chopped
  • 1/2 cup of sliced green onions
  • 1/2 cup of halved seedless red grapes
  • 1 cup of unsalted roasted whole peanuts
  • 1 tsp curry powder
  • 1/2 tsp granulated sugar
  • 1/8 tsp ground turmeric
  • pinch salt
  • 1/4 cup of freshly squeezed lemon juice
  • 3 tbsp mild or hot mango chutney
  • 2 tbsp red wine vinegar
  • 1/4 cup of canola oil


  1. In a large bowl, combine lettuce, apple, green onions and grapes
  2. Dressing: In blender, combine curry powder, sugar, turmeric, salt, 1/4 cup (60 mL) water, lemon juice, chutney and vinegar; blend until smooth. With the motor running, through the feed tube, gradually add oil and process until blended.
  3. Pour half the dressing over salad and toss to coat. Garnish with peanuts. Pass the remaining dressing at the table, if desired.
